Unable to just leave a recipe alone (her’s is vegan and I’m not keen on the texture of eggless bakes) I adapted it slightly, and the five year old and I made a batch of our own Banana Weetabix Blueberry Breakfast Muffins
I have a basic easy muffin recipe that I always stick to and I just add different bits and bobs to the mix depending on what sort of muffins I am making – the batch I made today were blueberry muffins using a couple of handfuls of frozen blueberries but I often chop up a chocolate bar or mash some mashed banana and cinnamon up to add in, both of which always go down well
To use it up I have made some small BananaMuffins. In particular, the ‘way too brown’ banana. The muffins should look fairly risen and be firm to touch
These not too sweet yet delicious muffins with white chocolate I made by request from a colleague for the office cakes at the end of May, and they went down very well
Easy to make with just a blender and a muffin tray, they use oats instead of flour (used as your Healthy Extra B on Slimming World), they’re great with a nice cup of tea whether that’s at your desk for a work day snack, or sharing with friends at home

I was in the midst of a baking frenzy for a family party on Friday, so I thought I might as well use up my over ripe bananas and make these bananamuffins while I was in the baking mood
