BREAKFAST IS SUCH a contentious issue. Do you. Don't you. If not, why not. I usually settle for a quick "bacon roll to go", but today, I was rather more inspired and whipped up this speedy dish with everyday bits and bobs from the fridge
I make this for my family of four, but I've put the ingredients down for a two person serving, so it's easy to double or halve them, for four people or one person
With just three easy to find ingredients and minimum preparation time, it tastes a million times better than the ready made stuff and is cheaper too – I’ll never buy ready made chicken tikka again
Anyway, so apart from rice and tomatoes, we add beans in this pot. I have used Garbanzo beans ( which is Chickpeas simply ) and Red Kidney Beans in my preparation
I’ve been meaning to make my own bakedbeans for ages, and finally got around to it yesterday. This is a recipe for beans on toast, but not as you know it
dried pinto beans 375g. 1crusty bread or butter to serveMethod Step 1 Put the dried beans in a large bowl, cover with plenty of cold water and leave to soak for at least 8 hours, or overnight. Step 2 The next day, drain and rinse the beans. Add the beans and 600ml of the cooking liquid, the bay leaves and thyme. Cook in the oven for 3 hours until the beans are tender and the sauce thickened
Rinse and pat dry the chicken thighs, trim the unwanted parts. Rub both sides of the chicken (even under the skin) with salt, pepper, paprika, garlic powder and parsley
if you cook your beans from dried, your refried beans will be even cheaper still… but since I’m usually going for something quick and easy, I prefer to use the tinned version)
