Ingredients

  • 1 cup Mixed farali flour
  • 1/2 cup Rajgro - Amaranth flour
  • 1/4 cup Buckwheat flour - Kuttu ka Aata
  • 1/4 cup Shingoda flour - Water chestnut flour
  • 1 cup Grated dudhi ( bottle gourd )
  • 1/2 cup Grated potato
  • 3 tbsp Roasted peanut powder
  • 2 tbsp Ginger chilli paste
  • as needed Sindhav / Sendha namak
  • 2-3 tbsp Fresh chopped coriander
  • 1/4 tsp Freshly ground black pepper
  • 2 tbsp Sugar
  • 3 -4 tbsp Yogurt
  • 2 tbsp Oil
  • For the Vaghar -
  • 2-3 tbsp Oil
  • 1 tsp Cumin seeds
  • 1 sprig Curry leaves
  • 1 Dried red chilli
  • 1 tbsp Sesame seeds
  • For garnishing
  • handful Fresh finely chopped coriander
  • 1 tbsp Grated coconut
  • 1 Lemon wedges
  • For amranth Chaas
  • 1 cup Plain natural yogurt
  • 1/4 cup Popped amaranth seeds ( Rajgro dana )
  • Salt to taste
  • 1/2 tsp Black pepper powder
  • 1 tbsp Fresh coriander
