  • Makes about 4 ramequins
  • 3 LARGE SHALLOTS (or 5 normal ones)
  • 300 GR SMOKED BACON
  • 1 TBSP GOOSE FAT or DUCK FAT
  • 450-500 GR DUCK LIVERS
  • 100 ML MADEIRA
  • SPRINKLE OF THYME
  • 4 BAY LEAVES
  • SALT / GROUND PEPPER
  • + 200GR MELTED BUTTER - WARM NOT HOT!
