Made with bitter dark chocolate, prunes for sweetness and flaxseeds for a healthy boost. Melt dairy free margarine with the chocolate and sugar in a bain-marie (A bowl over gently simmering water, Make sure the bowl doesn't touch the water or the chocolate will seize)
These are a lovely light muffin, with that slightly sweet earthiness you get from beetroot and a gorgeously gooey stickiness from the prunes and chocolate
It was a hit with the recruits, despite the fact that there wasn't time to soak the prunes overnight - I simply put them into the microwave and warmed them up a bit

These brownies are a decent size but still only one syn per square, which is pretty epic in my books…you’re never going to get the gooey unhealthy effect that you do with regular brownies but if you’re looking for a chocolate fix then they’re incredible
Normal chocolate mousse has tonnes of cream in, which makes it creamy (obviously) but also means it’s very high syn, but I’ve managed to get the same result in this without any of that
Do you remember when there was a walnut at the bottom of Walnut Whips (as well as the top), when cars had leather upholstery as standard, a holiday was a day trip to the beach, crisps had a little blue packet of salt in them, lemonade (and beer) came in refundable bottles with glass stoppers, a take away was only fish and chips, school trips were nature walks and chocolate cakes were simple and yet so light and moist
