chop all the vegetables.
melt the butter in a pan.
sauté the onion and garlic in the melted butter for a few minutes till soft.
add all of the chopped vegetables to the soup maker and add the onions and garlic.
Add the stock and ensure it is up to the minimum level.
Stir and set the machine to the chunky setting.
Serve fresh with crusty bread.
I used a lot of vegetables that are in season now here in the Netherlands. Me and my stick blender are almost inseparable My husband on the other hand likes to see what he eats, so he prefers a soup in which the ingredients are still recognizable
The list of ingredients below is what I happened to have left in the fridge on this occasion however I regularly swap these for alternatives and as long as there’s a couple of root vegetablesand some sort of onion it works
