Ingredients

  • 1 heaped tsp finely grated lemon zest
  • 7 oz/225gms plain (all purpose) flour
  • 5 oz/150gms butter at room temperature
  • 2½ oz/75gms caster (superfine) sugar
  • 1 whole egg
  • 1 egg yolk
  • 4 young fresh stalks of rhubarb
  • 1 tbsp sugar
  • 2 tbsps water
  • 1 little red food colouring (optional)
