I like the contrast of crisp spinach, sweet strawberries, creamy avocado nestled beside tangy goatcheese, toasted pecans, and topped with a balsamic vinaigrette
Dip the goatscheese into the egg then into the breadcrumbs, turning so fully covered. Assemble the salad by adding a handful of rocket into each serving dish, tear in the sliced aubergine, add the tomatoes and toasted walnuts
Cut or break the cheese into big chunks and put on top of the salad. Have a close look and check after a minute and a half as the cheese can melt really fast
