trays with baking paper Put the flour, paprika and rosemary on a plate and season well with salt and pepper Whisk the egg in a bowl Put the panko breadcrumbs and chilli flakes in another bowl and season well Cut any fat off the chicken and then slice into strips Take each strip and coat in the flour, shake off the excess and then dip in the egg Roll each strip in the breadcrumbs and place 2 of the baking trays If you have some spray oil then give the chicken a spray. This will help it turn golden. Peel the sweet potatoes and slice them into fries Add the paprika and oil and mix so they are all coated Place them on the third baking tray and put them in the oven for 10 minutes Now turn them over and add the chicken to the oven. Bake for another 15-20 minutes Remove when the fries are soft and the chicken crispy on the outside with no pink on the inside.

Recently I’ve been trying to come up with some fun recipes made using the spiralizer (including my spiralized squash withsweet chilli chicken), and today’s recipe for spiralized sweetpotato curly fries is definitely up there as one of my favourite uses for the spiralizer so far
8 Chicken Thighs (all visible fat removed). 11 small sweetpotato (approx 250g/9oz). 1200ml/7fl oz of chicken stock. 1Fresh Chopped CorianderPierce sweetpotatowith a fork, place in microwave and cook for 5 mins (should feel soft to touch). 1Spray pan with spray oil. 1Cut sweetpotato in half and scoop out all flesh, add to instant pot, along with all the spices. 1Mix well, roughly mashing sweetpotato. 1Add chicken thighs, chilis, coconut milk and chicken stock. 1Shred chicken slightly into sauce. 1Sprinkle with fresh chopped coriander. 1Serve with choice of sides
