Creamy Vegetable Soup

  • 1 onion, finely chopped
  • 12 cloves of garlic,crushed
  • 15 heaped cups of mixed frozen veg (broccoli, carrots and cauliflower)
  • 16 cups of chicken or vegetable broth
  • 11 cup (240ml) of ight coconut milk (8 syns)
  • 1 pinch of dried thyme
  • 11 tablespoon of tapioca starch (or corn starch) - 1.5 syns)
  • 1 Salt and black pepper to season
  • 1 Spray oil
  • 1 Optional: also works well with some frozen corn added (not whole30 or Paleo friendly)Spray a deep saucepan over a medium heat with oil and add the onion, saute for a few mins until translucent, add the garlic and saute for a few more minutes.
  • 1 Add the veg, dried thyme and broth, bring to a boil and then simmer, covered for approx 15 mins.
  • 1 Add the coconut milk
  • 1 Mix the tapioca starch with a little water to make a paste and stir this into the soup. Heat gently until soup thickens.
  • 1 Season taste with salt and black pepper
  • 1 Enjoy!!
