Creamy Tomato Pasta Sauce

Ingredients

  • 4 ripe vine tomatoes, peeled and chopped
  • 11 onion, finely chopped
  • 12 cloves of garlic, crushed
  • 11 baby aubergine (egg plant), chopped
  • 11 courgette (zucchini) chopped
  • 11 cup/240ml of passata
  • 11 tbs of tomato paste
  • 11 cup/240ml of chicken or vegetable stock
  • 16 tbs of low fat cream cheese (6 syns)
  • 1 sprinkling of Italian herbs (I used dried)
  • 1 spray oil
  • 1 Salt and Pepper
  • 1 fresh chopped basil or Italian parsleyPlace a non stick frying pan over a medium heat, spray with some spray oil.
  • 1 Add, the onion, garlic, aubergine and courgette and cook until softened. Approx 5 mins.
  • 1 Add the tomatoes,tomato paste, passata, italian herbs and the stock.
  • 1 Bring to the boil, reduce heat, then cover and simmer for 40 mins.
  • 1 Roughly blend with a hand (immersion) blender
  • 1 Add the cream cheese and whisk until sauce becomes thick and creamy.
  • 1 Season with salt and pepper as needed, and serve with cooked pasta, or spiralled veggies or even chicken.
  • 1 Serve topped with some fresh basil or Italian parsley
