Ingredients

  • 80 g Wild Rice
  • 8 shallots
  • 2 celery stalks
  • 3 garlic cloves
  • 600 g mixed mushrooms
  • 1 head of cauliflower
  • 1 litre
  • 1 tbsp wholegrain mustard
  • 2 tbsp fresh parsley
  • 250 ml skimmed milk
  • 2 tbsp corn flour
  • 6 ) Using a hand blender, blend the soup until smooth. Add the rest of the mushrooms, the cooked rice and the milk mixture to the blended soup and simmer for 5 minutes
