Ingredients

  • 1 tbsp olive oil
  • 1 small white onion, diced
  • approx. 2 carrots, peeled and diced (I used baby carrots, an amount that I felt was the equivalent to 2 whole carrots)
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1/3 cup all purpose flour
  • 8 cups chicken broth
  • 3 cups cooked, shredded, chicken
  • 2 cups uncooked egg noodles or preferred pasta (I used whole wheat, wide, egg noodles)
  • 12 oz (1 can) fat free evaporated milk
  • 1 tsp salt
  • 1/2 tsp dried oregano
  • ground black pepper, to taste
  • 1/4 tsp dried thyme
