Gluten free pastry can be very disappointing, its often hard and has little or no flavour, so I was pleased to discover a promising gluten free recipe on the BBC good food website, I decided I would combine this with a traditional creamychickenandvegetable filling for my first foray into gluten free pastry
With that in mind I came up with a Roast ChickenandVegetable Pie with a Suet Crust. I cooked the filling in the casserole (in the usual manner lid on) and then removed the casserole lid and popped on a suet crust
The chicken pie was a red ticket number that was plucked out of the big freezer. Ok for bakers out there and cake people I am sure you can churn them out all day
When my Chilli Peppered Chicken Steaks were cooked, I simply turned off one half of the grill and pushed them to one side to keep warm whilst I finished cooking the Mediterranean Goat’s CheeseVegetable Stacks – it was so easy and the results were superb, as you can hopefully see from my photos
Hearty ingredients coated in a thick, shiny sauce and topped with creamy mashed potato…yum. At this point add your other vegetables, for me this was sweetcorn and chopped mushrooms, and continue to stir, adding more stock if it thickens too much
It’s a simple and traditional British style pie packed to the pastry rafters with mature Cheddar cheese, fluffy mashed potatoes, creamcheeseand freshly grated onions
