Anyway, to get back to today’s recipe, which I baked in one of my Hovis tins, it’s that good old standby, the saviour of old bananas, a BananaBread or as Nigel Slater calls it so eloquently, a Black BananaCake
It’s a firm family favourite, in fact I would go as far as to say it’s THE family favourite cake, often found in packed lunches (where I am told their friends go YUCK on account of how it looks) and I’m not going to lie, bananas are bought purely so they go spotty and can be turned into cake
This recipe makes a moist, bananacake oozing with flavour whilst remaining light in texture. cake. Overripe bananas are only good for one thing in my opinion
I incorporated the crackers for making Ritz BananaCake that was a favorite for everyone at home. These crushed cookies replace the flour for making the cake

When I was younger, I hated any cakes or bakes that involved bananas. I've experimented with a few bananabread recipes- both healthy and indulgent- and have come to the conclusion that this mix of the two is probably my favourite one so far
