  • 2 eggs 1/2 cup vegetable oil
  • 2 tsp bicarbonate of soda/baking soda
  • 3 tbsp dark rum*
  • zest and juice of 1 orange 1 tsp grated nutmeg
  • 1/2 tsp salt

  • 1/2 cup desiccated coconut
  • 1 cup coconut milk
  • 150 g dark chocolate (I used 60% cocoa)
  • 2 tbsp rum*
