Coconut Chicken and Sweet Potato Curry (Instant Pot and Stove Top)

Ingredients

  • 8 Chicken Thighs (all visible fat removed)
  • 11 small sweet potato (approx 250g/9oz)
  • 11 onion, finely chopped
  • 12 carrots chopped fined
  • 14 cloves of garlic crushed and chopped
  • 11 tsp of ground ginger
  • 11-2 red chilli, chopped
  • 11 tsp of turmeric
  • 12 tsps of cumin
  • 12 tsps of coriander
  • 1200 ml/7fl oz of light coconut milk - 6 syns
  • 1200 ml/7fl oz of chicken stock
  • 1 Spray oil
  • 1 Fresh Chopped CorianderPierce sweet potato with a fork, place in microwave and cook for 5 mins (should feel soft to touch)
  • 1 Set aside to cool slightly
  • 1 Set instant pot to saute mode
  • 1 Spray pan with spray oil
  • 1 Add onion, garlic, carrot and ginger and fry till softened
  • 1 Cut sweet potato in half and scoop out all flesh, add to instant pot, along with all the spices
  • 1 Mix well, roughly mashing sweet potato.
  • 1 Add chicken thighs, chilis, coconut milk and chicken stock
  • 1 Set to poultry (high pressure 15 mins)
  • 1 Then allow a natural pressure release
  • 1 Shred chicken slightly into sauce
  • 1 Sprinkle with fresh chopped coriander
  • 1 Serve with choice of sides
