While the cakes are cooling, whip the cream, icing sugar and vanilla essence until nice and thick. Spread the jam over the inside of one of the cakes, top with the whipped cream and then place the other cake on top

Spread the buttercream over the bottom of one of the sponges. Bake for about 20 mins until golden and the cake springs back when pressed. Top it with 170g strawberry jam and sandwich the second sponge on top
