Ingredients

  • 8-12 slices
  • 4 large eggs
  • 225 g caster sugar
  • 225 g self raising flour
  • 2 tsp baking powder
  • 225 g butter, at room temperature, plus a little to grease the tins
  • 1 tsp vanilla essence.
  • 150 g raspberry jam
  • 300 ml whipping cream
  • 75-100 g fresh or frozen raspberries, saving 4-5 whole, good raspberries for the top
  • 1 tsp icing sugar.
