Raspberry scones, sandwichedwithclottedcreamand a dribble of passionfruit. I once got told off by a Women’s Institute judge for making savoury sconeswith a fluted edge
I don’t reserve scones for just special occasions, they’re an every day favourite in my house, but every now and then it’s nice to “dress them up” with a selection of jams, clottedcreamand perhaps some strawberries too to make a quintessentially British treat
A classic at all times but especially in the summer outside in the garden under a shady tree is freshly-made scones still warm from the oven served with strawberry jamand whipped cream, a pot of tea on a tray
A cream tea is simply scones served withjamandclottedcream. There is always the discussion should you have them cream then jam, or jam then cream…I tend to go with whichever I can get to first
The only problem with these doughnuts are (apart from being so yummy) is they are very delicate to handle once you make them into a sandwich, it’s probably best to serve them straight on a plate then letting people help themselves

Dust with icing sugar. Cream together the softened butter and sugar until smooth andcreamy. Butterfly cakes were one of the very first cakes I learnt to make and even today, they always go down a treat
(I am so happy with it. Creamyand crumbly fudge, I will never have to buy fudge again. ) Fudge has been on my bucket list for quite a while now and thanks to my sugar thermometer I have finally been able to make it
Flatten each with your thumb and then score lines using a cocktail stick. Beat the butter and sugar together in a (large) mixing bowl until light andcreamy
