I think that lemoncakes are one of my favourite and also so easy to make. I actually tried my hand at candied lemon as well to go on top to give it that final and they came pretty well

On this week’s menu was the Hummingbird Bakery’s amazing Lemon and Thyme Drizzle (or Loaf) cake. Elldrew’s handy hint is to pour the syrup through a sieve onto the cake – we found that this stops any big lumps of thyme or lemon clumping on the cake
I decided to escape the madness this evening and while Ethan is asleep I decided to write a blog post and share a delicious LemonDrizzle traybake recipe with you all
To make the drizzle sieve the icing sugar into a bowl and grate in the zest of one lemon. Once the cake is well cooled pour the drizzle over the top to create a zigzag design
