So tonight I needed to use up a huge leek from the farm shop, some pancetta cubes and half a carton of cream – with onions and potatoes in the fridge too then soup is always a good choice
My Scottish leek and potatosoup version has an extra twist to it, which is completely optional. Using a potato masher or blender/food processor, mash / blend the soup to a required consistency
This soup works well chunky or pop it in the blender when it’s cooked. Nothing beats a hot soup with fresh bread on a cold January day and my go to easy soup is always leek and potatosoup
I wanted to make a veggie soup, but also wanted one which is wholesome and filling so, naturally, I went for leek and potato (brocolli and stilton would have been a close second)
