Ingredients

  • 1 large cooking apple, grated (approx 200g of grated apple)
  • 3 tbsp Dark Rum
  • 150 g Whitworths dark soft brown sugar
  • 150 ml Sunflower oil
  • 3 Eggs grated zest of 1 orange grated zest of 1 lemon 50g Dried cherries
  • 50 g Sultanas
  • 50 g Raisins
  • 150 g Self Raising Flour
  • 50 g Ground Almonds
  • 1 tsp Bicarbonate of soda
  • 1 tsp Mixed spice
  • 1 tsp Cinnamon
  • Frosting
  • 130 g Butter, softened
  • 220 g Whitworths superfine icing Sugar
  • 3 tbsp Dark Rum
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • pinch of mixed spice
