Ingredients

  • 1 litre pudding
  • 4 small
  • 1 lb cooking apples, peeled cored and finely chopped
  • 8 oz shredded suet
  • 12 oz raisins
  • 8 oz sultanas
  • 8 oz currants
  • 8 oz mixed peel (I subsitute this with a mixture of the other dried fruits)
  • 12 oz soft dark brown sugar
  • Zest and juice of 2 oranges Zest and juice of 2 lemons 2oz flaked almonds
  • 4 tsps mixed spice
  • 1 tsp ground cinnnamon
  • Half a nutmeg grated
  • 6 tablespoons of brandy
  • 200 g raisins
  • 150 g currants
  • 100 g flaked almonds
  • 75 g dried chopped apricots
  • 75 g dates chopped
  • 1 large cooking apple, peeled, cored and grated
  • 1 medium carrot grated
  • 1400 g suet
  • 140 g plain flour
  • 140 g demerara sugar
  • 75 g fresh breadcrumbs
  • 2 beaten eggs
  • 4 tbsps stout
  • Juice and zest of one orange
  • Juice and zest of one lemon
  • 2 tbsp brandy
  • 1 tsp salt
  • 1/2 tsp cinnamon
