a a lovely relief it was to bake a cake and just enjoy it for the process rather than engaging my brain. The children helped, it was fun and really relaxing to just be told what to do without faffing about buying too many ingredients or planning what to conjure up.

And it is impressive – four layers of dark, moist fudge cake filled with saltedcaramel swiss meringue buttercream (and extra caramel) and topped with whipped chocolate ganache and a generous drizzle of more saltedcaramel, this cake is truly indulgent (don’t think about the amount of sugar involved…)
I developed my new favourite chocolate fudge cake – I used sour cream and a mix of cocoa and melted chocolate, because if you just substitute some flour for cocoa powder you can end up with a dry ol’ cake
