  • 130 g butter, softened
  • /60 g golden syrup
  • 160 g caster sugar
  • 1 medium free range egg
  • 235 g plain flour
  • 1 tsp baking powder
  • 10 g cocoa powder
  • 1 handful mini marshmallows (if you’re veggie, you can get Freedom Mallows and cop them into thirds with scissors)
  • 16 squares of good quality dark chocolate
  • 1 inch balls (I weighed one, it was 15g) and place a good 2-3 inches apart on a lined baking sheet – flatten with the palm of your hand so they double in width
  • 180 C fan assisted
  • 6 minutes As soon as they come out of the oven, shake the sprinkles over to cover the melted chocolate, then allow to cool slightly for a few minutes
