Ingredients

  • 2 jar
  • 500 g ripe tomatoes chopped
  • 4 red chillies, seeded and chopped
  • 4 garlic cloves
  • 5 cm piece of ginger, chopped
  • 2 stalks of lemongrass peeled and chopped
  • 2 tbsp Thai fish sauce
  • 
300 g soft brown sugar
  • 100 ml red wine vinegar
  • 3 fresh Thai lime leaves (or dried if you can't get fresh)
  • 55 g raisins
