Ingredients

  • 1 can chickpeas
  • 1 can red kidney beans
  • 1 small piece of ginger, grated or shredded
  • 1 medium onion, diced
  • 2- 3 cloves garlic
  • 1 tbsp olive oil
  • A pinch of red chili flakes
  • 3-4 spring onions (scallions), green part only, chopped
  • 1 cup chopped parsley OR coriander ( I used cilantro )
  • Juice of one lemon
  • 150 g feta cheese – almost half cup size
  • Salt and Black pepper
