Quinoa has come a long way in culinary cuisine it is small in size but big in flavour and can be eaten as a light meal in salads, soups or with main meals with curries to replace rice
The vegetables to compliment the beetroot used in this salad can be swapped and substituted depending on availability and I would make this with corn, fine green beans or baby runners too
Stir half in with the salad and season with salt and pepper. This is one of my new favourite salads from the chef Denis Cotter's book 'For the love of food' which is so incredibly amazing and I can't believe I have only just found out about him

For the dressing remove the beef and pour the marinade into a bowl through a sieve to remove the bits and stir in the mirin, extra pomegranate molasses and a pinch of salt
Spoon the dressing over the salads and serve. For the salad. To make the dressing add all of the ingredients into a jar or bowl shake or whisk well to combine

But, it also makes a great ingredient for lots of different dishes – think of pairing it with noodles and steamed pak choi or make for a fantastic take on a tuna nicoise salad
