The marinade below is my go to one for marinating chicken, especially for Thaiand Malaysian dishes, the coconut milk keeps it lovely and tender, and I love the flavour that the lime leaves give to it
The one with the purple cabbage andcarrots. This chickenwithThai peanut sauce does double duty as a fantastic saladand as fun skewers for the kids at your table who may not be down with the salad idea
For the salad, mix the leaves, red onion, radishesand mint together in a bowl until well combined. To serve, place some salad onto the plate, with the chicken strips alongside
Increase the heat and add the ginger with the remaining Thai curry paste and fry for a minute. I made it for dinner last night, the sauce was rich and creamy with just the right amount of spiciness
The honey, which I bought at the local market recently and is a beautiful Lincolnshire honey, and orange work beautifully well with the richness of the chicken thighs and they little radishes are bursting with lustful joy
Put zucchini, carrotand cabbage in a bowl and mix all veggies with your fingers. And, like I said, there’s nothing more fun than dinner prep with this Thaichicken recipe
I like to add a simple dressed salad to the plate too. The chickensatay is packed full of spice and while it’s fine to mince the marinade ingredients in a food processor, I rather like doing it with a pestle and mortar to work out some of those pent-up tensions
Serve withThai fragrant rice and garnish with fresh corianderand chilli pepper. When I have time, I prepare my own paste from scratch, but during the working week I have to stick with the quickest solution
And it can most certainly be made with a selection of vegetables – capsicum (peppers), carrots, green beans and cabbage would be great used in this dish
Pour the sauce into a bowl and serve with the chicken skewers, rice and cucumber strips. Chicken is one of those food we have a constant battle with but when I make this super easy ChickenSatay Skewers recipe she is always a lot more open to trying it
