2 chicken
breasts (frozen is cheaper) Dried pasta (value is 30p in tesco) Small jar of pesto Handful of cherry tomatoes 1 tsp garlic powder (optional) Sprinkling of Parmesan (optional/cheddar is cheaper)
With some quickly browned chicken I cut into chunks, some sautéd mushrooms and onion, a simple deglaze of the pan withchicken stock, pesto and some cream are added to make a smooth sauce that smothers the pasta
Non-starchy vegetables (broccoli, green beans, spinach, lettuce, sweet and hot peppers, tomatoes), also contain some carbohydrate, but much less than starchy vegetables
Cut the pepper, onion & courgette into chunks, season & spray with oil. Add the chicken & bacon mix and roast veg to the cooked pasta and stir through the cream cheese
Put the chicken breast in a roasting dish with the vine tomatoes. Put a piece of ham or bacon on each chicken breast and sprinkle with some more olive oil
Cut a pocket inside one of the chicken breasts and fill with a tbsp of the pesto, add the other tbsp to the top of the chicken breast and wrap snuggly with the prosciutto ham, repeat with the other chicken breast
So once you're pasta is boiled and your veg is roasted and oozing flavour, throw it all in a bowl with the pesto and mix it around until you've got a nice even spread
Serve with a salad to get extra speed food in. Mix the pasta, BBQ sauce, chicken, bacon and vegetables together and then pour into the dish you're using to bake it in
