Chicken Pad Thai

  • Ingredients
  • 250 g (8 ounces) Miracle Noodle
  • 1 TBS sesame oil
  • 2 boneless, skinless chicken breast, cut into 1/2 inch cubes
  • 2 large free range eggs, beaten
  • 1 large banana shallot, peeled and minced
  • 1 large handful of bean sprouts
  • 1 medium carrot peeled and juilienned for the sauce:
  • 1 ounce each fish sauce, soy sauce, rice wine vinegar, lime juice and sriracha sauce (or tabasco)
  • 2 TBS splenda brown sugar mix, or regular brown sugar
  • You will also need 2 spring onions, trimmed and finely chopped, a large handful of crushed peanuts, and a handful of chopped fresh coriander leaf (cilantro)
