  • a pinch of sea salt
  • 1 tbsp olive or rapeseed oil
  • 120 ml Marsala wine (or Mead, or Sherry)
  • 2 tsp wholegrain mustard
  • 100 ml water
  • 1 tsp
  • 1 tsp thyme
  • 150 ml double cream
  • 1 tsp cornflour
