Ingredients

  • 700 g chicken thigh meat, cubed
  • 250 g button mushrooms, sliced
  • 1 large red capsicum, seeded and chopped
  • 1/3 cup butter
  • 1/3 cup flour
  • 1 1/2 cup chicken stock
  • 1 1/2 cup milk
  • 1 tsp ground nutmeg
  • 3 tbsp dry sherry
  • 1 large white onion, chopped
  • 4 cloves garlic, minced
  • salt
  • freshly ground black pepper
  • 3 sheets frozen puff pastry, each sheet cut into 4 squares 1 large egg, beaten
  • 1. In a pot melt half of the butter then add the chicken pieces, once browned using a slotted spoon remove from chicken from pot then set aside
  • 2. Using the same pot sauté onion and garlic
  • 3. Add the remaining butter then stir in the flour to form a roux, once evenly mixed add chicken stock and milk, then bring to a light boil while continuously stirring
  • 4. Add the chicken, mushroom, capsicum, nutmeg and sherry then gently simmer for
