So tonight I needed to use up a huge leek from the farm shop, some pancetta cubes and half a carton of cream – with onions and potatoes in the fridge too then soup is always a good choice

My Scottish leek and potatosoup version has an extra twist to it, which is completely optional. Using a potato masher or blender/food processor, mash / blend the soup to a required consistency
Wash and chop the squash, onions and the potato and the leek. This gluten free, vegan & vegetarian friendly butternut squash & leeksoup is creamy & indulgent
I wanted to make a veggie soup, but also wanted one which is wholesome and filling so, naturally, I went for leek and potato (brocolli and stilton would have been a close second)
