Ingredients

  • 400 g potatoes
  • 1 cauliflower 200 g carrots
  • 2 shallots 2 garlic cloves
  • Fresh ginger
  • (similar amount to the garlic)
  • 1-2 small dried
  • chillies
  • 250 g tomatoes
  • 70 g cashew nuts
  • 1 tbsp vegetable
  • oil
  • 1 tsp ground
  • turmeric
  • 2 tbsp fresh
  • coriander leaves
  • 4 tbsps coriander
  • seeds
  • 2½ tbsp cumin
  • seeds
  • 1 tbsp black
  • peppercorns
  • 3-4 large black
  • cardamom pods
  • ¾ tsp cloves
  • ¾ tsp cinnamon
  • ¾ tsp crushed bay
  • leaves
  • 1½ tsp dry ginger
  • (don't toast)
