I love potato and onion soup, but my boys find it harder to take with the onion taste. This literally is just potatoes and onions with some stock, so it might not be for everyone

I love cauliflowercheese, it's one of those comfort foods that screams of cosy sunday's in front of the fire and so when I saw this pretty soup on the Elizabeth's Kitchen blog I really had to have a go at making my own version
800g of cauliflower, chopped. 1salt and black pepper to season. 1Add the onion and fry till softened and lightly caramelized (approx 5 mins). 1Add the cauliflowerand stock. 1Bring to a boil and then reduce heat, cover and simmer for 20 mins. 1Add about ½ soup to a blender and blend till smooth. 1Pour back into the saucepan with the cheddar and stir until cheese is melted. 1Season as needed with salt and black pepper
