Caribbean Chicken Soup

Ingredients

  • Carrots.. Leeks.. Bell peppers.. Celery..
  • All fresh herbs... Bay leaves.. Rosemary... Thyme.... Coriander... salt & pepper.. turmeric
  • Chick peas... Butter beans..
  • Coconut milk 2 Cans ...
  • Lemon & Lime juice...
  • Orzo pasta Half Pack & Whole chicken of course 😋🐔

Instructions

    Bring Chicken to a boil with sprig of thyme.. Rosemary.. Bay leaves.. salt.. pepper & turmeric for 2 hrs... simmer on medium to low heat...
    Remove chicken to cool...
    Roughly chop all vegetables and add to stock..
    keep cooking on medium to low heat until vegetables are all cooked... add boiling water as you go...
    Add chick peas... butter beans and Orzo... reduce down...lastly add lemon & lime juice & chicken pieces back into soup...
