—In a hot saucepan over a medium heat, combine red peppers, onion, oil and butter; saute for 2 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until the onions and peppers soften. If desired, stir red wine into the vegetables and cook until the wine evaporates; approximately 30 minutes. Season with salt, pepper, and basil.
I love the sweet and buttery smell of onions frying away ever so softly. It doesn’t stay fresh for very long so it’s best eaten the day you make it – which is handy as when it is warm andsmothered in salted butter you will find it hard to stop
You can either cook this in a dish in the oven, as a 'crustless quiche', or you can cook it frittata style in a pan over the hob, and finish it off under the grill (broiler) - however, if you do the latter, you'll need to remove the caramelised onionsandpeppers to a seperate dish and clean the pan first, then spray with oil and add the egg mix then other ingredients otherwise the caramelised balsamic vinegar remains in the pan are likely to make your frittata stick to the bottom and burn
