Caramelized Onion, Tomato and Mozzarella Filo Tart

Ingredients

  • 2 sheets of filo pastry (8 syns)
  • 11 small red onion sliced
  • 1 some cherry tomatoes, thinly sliced
  • 190 g (3oz) of mozzarella, grated (2 HEa’s)
  • 1 salt and pepper to season
  • 1 balsamic vinegar
  • 1 spray oilPreheat oven to 200c or 400f (gas mark 6)
  • 1 Spray a frying pan over a medium high heat with spray oil,
  • 1 Spray two small round tart dishes with some spray oil.
  • 1 Fold each sheet of pastry, into a square which is slightly bigger than your tart dish.
  • 1 Push into the tart dish and then fold down all the edges. Place in the oven and bake just until it starts to go golden and remove from oven.
  • 1 Place in the oven and bake just until it starts to go golden.
  • 1 While pastry cases are browning.
  • 1 Spray a frying pan over a medium high heat with some spray oil, add the onion and cook the onions until caramelize. Add a splash of balsamic vinegar.
  • 1 Add the caramelized onion to the top of the filo pastry sheets, then the cheese and slices of tomato.
  • 1 Season with some salt and black pepper and then place in the oven and bake until cheese is melted and golden.
