Ingredients

  • Savoury Muffins - makes 30 small muffins
  • 50 g streaky bacon cut into fine strips
  • 50 g unsalted butter
  • 25 g button mushrooms, chopped
  • 150 g self raising flour
  • 1 tbsp fresh chopped herbs - chives, parsley etc
  • 25 g skinned, chopped tomato
  • 50 g Gruyère, grated
  • 1 egg, beaten
  • 100 g milk
  • salt and freshly ground pepper
  • Thai Chicken - enough for about 30-40 bite size pieces
  • 1 grapefruit 7g peeled garlic
  • 50 g honey
  • 50 g sunflower oil
  • 100 g fresh coriander - including stalks
  • 400 g skinned and boned chicken thighs
  • Salmon Carpaccio - makes about 30
  • 350 g salmon fillet, skinned, boned and sliced very thinly (lay on a plastic tray)
  • salt and freshly ground pepper
  • juice of 1 lemon 60g extra virgin olive oil
  • 5 g dried pink peppercorns, crushed in a pestle and mortar
  • 5 g coriander seeds, crushed in a pestle and mortar
  • 10 g freshly chopped coriander plus whole leaves to garnish
  • 9 slices of pumpernickle, lightly buttered and cut into little rounds
