Write a reviewSave RecipePrintCook Time2 hr 30 min Cook Time2 hr 30 min Ingredients225g/8oz chopped dried dates175g/6oz sultanas110g/4oz raisins110g/4oz currants27g/10oz margarine275ml/½pt water1 tin condensed milk150g/5oz plain flour150g/5oz wholemeal flour¾tsp bicarbonate of sodapinch of salt1 generous tbsp chunky marmalade InstructionsPreheat the oven to 170ºC/325ºF/Gas mark 3Grease & line a 20cm/8-inch square cake tinPlace all of the dried fruit in a large saucepan together with the margerine, water and condensed milk and bring to the boilStir frequently to avoid stickingSimmer the mixture for exactly 3 minutes and stir occasionallyTransfer the mixture to a large mixing bowl and allow to cool for half an hourWhile it's cooling, weigh the flours and sift them into a bowl together with the salt and bicarbonate of soda. 12 pm and is filed under cakes & bakes
Banana & Chocolate Loaf Cake. I don’t think it’s a secret around these parts that I love a loaf cake. That’s not me – so a loaf cake ticks all my cakey boxes
Pour the batter into the loaf tin, drop the reserved raspberries evenly over the top and bake for about an hour until browned (a skewer poked into the cake should come out clean)
This blog which started as an online cookery book has given me a great insight into baking and has transformed me into a home baker who is now thriving to learn a lot about cakes and decorating techniques
