Ingredients

  • 8  Free range chicken thighs
  • 1  Tub natural yoghurt
  • 4  garlic cloves
  • 4 inches  Fresh root ginger . chopped finely
  • 2 tsp  hot chilli powder
  • 2 tsp  Mild chilli powder
  • 3  fresh green chillies. whole in sauce and blended
  • 5  Cardamom pods
  • 5  Whole cloves
  • 4 x2 ` Cinnamon bark (lots)/ 2 x 2” cinnamon sticks
  • 3  Bay leaves
  • 1 bag  Bag unsalted cashew nuts
  • 2 lbs  fresh tomatoes
  • 1 tbsp  Tomato puree
  • 1 tbsp  Honey (runny)
  • 2 tbsp  Dried fenugreek leaves
  • 2/3 tbsp  Double cream
  • 200-250 gam  Butter (unsalted)
  • 2 tbsp  Vegetable oil
  •   Generous pinch Salt
  •   Cream and a squeeze of lime to serve
  • ½ tsp   turmeric
  • 5 cm  stick cinnamon bark
  • 4  whole cloves
  • 3  Cardomom pods
  • 1 heaped tsp Cumin seed
  •   veg oil
  • 1 pinch  Saffron strands
  • 2 handfulls of  cashew nuts
  • Shallots
  • 1 handfull of sultanas
  • 1 ½ cups  white basmati rice
  • 1  White onion. sliced (garnish for rice with coriander and chives)
  • 1 handfull Fresh coriander. roughly chopped
  • 1 handful  Fresh chives. chopped
  • 100 ml  Water
