Ingredients

  • 6 bone racks of lamb, enough for 3 pieces of meat per person,
  • 1 tbsp olive oil,
  •  
  • Parmesan gnocchi
  • 4 large baking potatoes- you need 300g of cooked potato in total,
  • 1 egg yolk,
  • 65 g ‘00’ flour,
  • 1-2 tbsp finely grated Parmesan,
  • Salt and black pepper, to taste,
  • 1-2 tbsp of oil, for frying.
  •  
  • Red wine lamb Sauce
  • 1 tbsp oil,
  • 2-3 lamb bones, if possible,
  • 1 onion, roughly chopped,
  • 1 carrot, roughly chopped,
  • 1 garlic clove, sliced,
  • 1 bay leaf and a couple of sprigs of thyme,
  • 250 ml red wine,
  • 500 ml of brown stock and 500ml of water,
  • Salt and black pepper, to taste.
