Ingredients

  • 25 g/1oz butter
  • 750 g/1lb 10oz chuck steak, cut into 4cm/1½in cubes
  • 2 medium onions, sliced
  • 3 garlic cloves, crushed
  • 1 tsp Kashmiri chilli powder
  • 1 tsp ground turmeric
  • 1½ tbsp garam masala
  • 1½ tsp salt
  • 600 ml/20fl oz beef stock
  • 50 g/1¾oz desiccated coconut
  • 100 g/3½oz sultanas
  • choose from: Bombay duck (or any dried, salted fish such as dried anchovies, available from Asian shops), apple chutney, tamarind chutney, sliced bananas, grated coconut and/or poppadoms
