  • 3 large carrots
  • 1 red onion
  • 2 cloves of garlic
  • 250 ml red wine
  • 400 ml beef stock
  • 1 tbsp balsamic vinegar
  • 1 tbsp tomato purée
  • 1 tbsp demerara sugar
  • 1 sprig fresh thyme
  • 1 tbsp olive oil
  • salt and freshly ground black pepper
