Ingredients

  • 2 large free range eggs
  • 250 g bunch English asparagus, trimmed
  • 2 tbsp cold pressed rapeseed oil (or extra virgin olive oil)
  • handful wild rocket
  • 1 ripe avocado, halved, stoned and skinned
  • 6 – 8 radishes, trimmed and sliced
  • 15 g toasted pine nuts or almonds
  • 50 g Kentish blue cheese, crumbled
  • 1 tbsp lemon juice
  • salt and freshly ground black pepper
