Ingredients

  • 1 clove garlic, finely chopped
  • 1 tsp corriander
  • 1 tsp grated ginger or spoon of lazy ginger
  • 1 pinches strands saffron
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp sweet paprika
  • 1/2 tsp chilli powder
  • 1 tbsp olive oil
  • 1 small pork hocks, skin removed
  • 1 small onion, diced
  • 1 carrot, diced
  • 1 green chilli, seeds removed, finely chopped
  • i/2 tsp of cinnamon
  • 1 x 400 g canned tomatoes, chopped
  • 1 tsp clear honey
  • 1/2 orange,zest only
  • 1 cup litres chicken stock
  • 1 tbs - dried corriander leaves - or fresh if you have any - same for herbs below,
  • 1 tbs dried parsley
  • 1 tsp dried mint
  • sea salt and freshly ground black pepper
  • lemon juice, to taste
  • 150 g quick-cook couscous
  • 1 tbs unsalted butter, diced
  • 1 tsp sea salt
  • 150 ml boiling water
  • 1 Granny Smith apple
  • 25 g blanched flaked almonds, toasted - optional
  • 25 g coriander leaves, chopped, plus 1 tbsp for garnish
  • 1 tsp dried mint - or swish some mint sauce through or use fresh if you have it.
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
