Ingredients

  • 500 g beetroot (about 1 1/4 pounds)
  • 500 g red onions (about 1 1/4 pounds)
  • 1 clove of garlic, bruised
  • splash of olive oil
  • 50 g demerara sugar (1/4 cup, turbinado)
  • 1 TBS honey
  • 1 TBS freshly grated gingeroot
  • 5 whole cloves
  • 5 whole peppercorns
  • 1 broken cinnamon stick
  • 150 ml cider vinegar (2/3 cup)
  • 1/2 tsp salt
  • pinch hot chili flakes
  • a handful of mixed dried fruit (sultanas, currants, candied peel)
