Ingredients

  • 5 cm piece of cinnamon stick 1 teaspoon black peppercorns 1/2 teaspoon cloves 1 teaspoon cumin seeds Seeds from 12 green cardamoms 1 small onion, roughly chopped 8 cloves garlic, peeled 5cm ginger, roughly chopped 2 tablespoons Tamarind liquid 1 teaspoon salt ½ teaspoon sugar 2 tablespoons Kashmiri chilli powder 1/4 teaspoon turmeric 5 tablespoons white wine vinegar For the Curry 750g boneless shin of beef, cut into 3cm-thick medallions . 2 tablespoons ghee 1 small onion, chopped 3 medium, ripe tomatoes, sliced 3 fresh green chillies, halved lengthways, seeds removed
  • 100 ml water
  • 1 tablespoon ghee 2 teaspoons nigella seeds 300 grams basmati rice 400 ml coconut milk 600 ml freshly boiled water 1/2 teaspoon salt juice of 1 lime (or to taste)
